Spicy Lentil Summer Rolls

The sauce

Instructions
- Prepare a workspace with a large bowl of warm water and a damp dish towel.
- Combine the cooked lentils with sriracha, sesame oil, and a pinch of salt in a small mixing bowl, adjusting the heat to taste.
- Soak one rice paper wrap in the warm water until soft, about one minute, then lay it on the damp towel.
- Layer cilantro, a handful of grated carrots and beets, a few slices of avocado, and about ¼ cup of the lentils down the center of the wrap.
- Fold the top and bottom ends over the filling, tuck the right flap over, and roll to close the wrap.
- Repeat the process with the remaining wraps.
- Enjoy immediately or wrap in plastic for travel.
