Spicy Lentil Summer Rolls

Ingredients

The rolls

  • 6 pieces rice paper wraps
  • ½ cup cilantro sprigs
  • cup grated carrots
  • cup grated beets
  • 1 large avocado
  • cups cooked lentils

The sauce

  • 1-2 Tbsp sriracha
  • 1 Tbsp toasted sesame oil
  • a pinch salt

Instructions

  1. Prepare a workspace with a large bowl of warm water and a damp dish towel.
  2. Combine the cooked lentils with sriracha, sesame oil, and a pinch of salt in a small mixing bowl, adjusting the heat to taste.
  3. Soak one rice paper wrap in the warm water until soft, about one minute, then lay it on the damp towel.
  4. Layer cilantro, a handful of grated carrots and beets, a few slices of avocado, and about ¼ cup of the lentils down the center of the wrap.
  5. Fold the top and bottom ends over the filling, tuck the right flap over, and roll to close the wrap.
  6. Repeat the process with the remaining wraps.
  7. Enjoy immediately or wrap in plastic for travel.
