Ingredients

The crust

  • 1 cup cold unsalted butter, cut into ½-inch chunks
  • 2 ½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt
  • ½ to ⅔ cup buttermilk

The filling

  • 1 tablespoon unsalted butter
  • 12 ounces beef chuck, diced
  • 1 ½ cups diced potatoes
  • ¾ cup diced carrots
  • 1 ½ teaspoons salt
  • ½ teaspoon crushed rosemary
  • ¼ teaspoon pepper
  • ¼ teaspoon oregano

The gravy

  • 3 tablespoons unsalted butter
  • ½ cup finely diced onion
  • 2 tablespoons all-purpose flour

Egg wash

  • 1 egg
  • 1 tablespoon milk

Instructions

  1. Prepare the pie dough by pulsing flour, butter, and buttermilk in a food processor until it forms crumbs, then refrigerate.
  2. Make the filling by browning the beef, adding vegetables and water, then simmering until softened.
  3. Create a quick gravy using some of the cooking liquid, flour, and butter, then mix it with the meat and vegetables.
  4. Assemble the pasties by rolling out the dough, filling with the mixture, sealing, and brushing with egg wash.
  5. Bake until golden brown and enjoy.
