Ingredients

The dressing

  • 1 5oz. container plain Greek yogurt
  • ¼ cup mayonnaise
  • 1 clove garlic, minced
  • 1 fresh lemon
  • ¼ tsp salt
  • ¼ tsp dried dill
  • to taste freshly cracked black pepper

The pasta salad

  • 1 lb. penne
  • 1 cup grape tomatoes
  • 1 medium cucumber (about 2 cups chopped)
  • 1 15oz. can quartered artichoke hearts
  • ¼ medium red onion
  • 2 oz. feta

Instructions

  1. Prepare the dressing by mixing Greek yogurt, mayonnaise, minced garlic, lemon juice, lemon zest, salt, dill, and black pepper in a bowl. Refrigerate.
  2. Cook penne pasta in salted water according to package directions, then drain and rinse with cool water.
  3. While pasta is cooking, prepare salad ingredients: slice grape tomatoes, chop cucumber, dice red onion, drain and chop artichoke hearts, and crumble feta.
  4. Combine cooled pasta, vegetables, and feta in a large bowl.
  5. Pour the dressing over the pasta salad and stir to coat. Serve immediately or refrigerate until ready to eat.
