Greek Veggie Pasta Salad

Ingredients

Dressing

  • 1 cup plain Greek yogurt
  • 2 Tbsp olive oil or avocado oil
  • 1 lemon juice of
  • ¼ cup lemon juice
  • ½ tsp lemon zest
  • 1 ½ tsp dried oregano
  • 2 cloves garlic
  • ½ tsp sea salt
  • ¼ tsp black pepper

Salad

  • 12 oz uncooked pasta
  • 2 Tbsp fresh dill
  • 1 medium cucumber
  • 1 ½ cups grape or cherry tomatoes
  • 1 bell pepper any color
  • ½ medium red onion
  • 6 oz feta cheese
  • ½ cup kalamata olives

Instructions

  1. Cook the pasta according to package directions, then drain and cool under cold water.
  2. Chop the vegetables and prepare the dressing by mixing all dressing ingredients in a bowl.
  3. In a large bowl, combine all salad ingredients and pour the dressing over them about 30 minutes before serving, tossing gently to combine.
