Ingredients

The Pasta Salad

  • 16 oz dry gluten-free pasta
  • 2 medium red bell peppers
  • ½ cup diced red onion
  • 1 small cucumber
  • 1 pint sliced grape tomatoes
  • 3.8 oz sliced olives
  • ¼ cup fresh dill
  • 7 oz crumbled feta (optional)

The Dressing

  • ½ cup red wine vinegar
  • ½ cup olive oil
  • 2 cloves garlic
  • 1 tbsp dried oregano
  • 1 tsp onion powder
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

  1. Cook the pasta according to the package instructions and drain.
  2. Chop all the vegetables and combine them in a large bowl, then stir in the dill and feta.
  3. In a separate bowl, whisk together all the dressing ingredients.
  4. Add the cooked pasta to the vegetable mixture and pour the dressing over it, stirring well to combine.
  5. Serve immediately or store in the fridge.
