Ingredients

The base

  • ½ cup creamy salted peanut butter
  • ¼ cup maple syrup
  • 2 Tbsp vegan protein powder
  • 1 ¼ cup gluten-free rolled oats
  • 2 ½ Tbsp flaxseed meal
  • 2 Tbsp chia seeds

The jelly

  • ¼ cup dried fruit

Instructions

  1. Combine peanut butter, maple syrup, protein powder, rolled oats, flaxseed meal, chia seeds, and dried fruit in a mixing bowl.
  2. Mix until well combined, adjusting with more peanut butter or oats as needed.
  3. Chill the mixture in the refrigerator for 5 minutes.
  4. Scoop out 1 ½ Tbsp amounts and roll into balls.
  5. Store leftovers in the refrigerator for up to 1 week or in the freezer for up to 1 month.
