Ingredients

  • cup toasted unsweetened coconut flakes
  • ½ cup peanut butter
  • ½ cup ground flax seed
  • cup honey or agave nectar
  • ¼ cup unsweetened cocoa powder
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Mix all ingredients in a medium bowl until well combined.
  2. Cover the mixture and chill in the refrigerator for at least 30 minutes.
  3. Once chilled, roll the mixture into balls of your desired size.
  4. Store the energy bites in an airtight container in the refrigerator for up to 1 week.
