Ingredients

The mixture

  • ½ cup no stir almond butter or creamy peanut butter
  • ¼ cup honey
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • 3 Tbsp unsweetened cocoa powder
  • up to 4 tsp warm water

The dry ingredients

  • 1 cup old fashioned oats (raw)
  • ¾ cup toasted or raw coconut
  • ½ cup flaxseed meal
  • 6 Tbsp semi-sweet chocolate chips

Instructions

  1. In a mixing bowl, combine almond butter, honey, vanilla extract, and cocoa powder.
  2. If the mixture is too thick, add warm water gradually until desired consistency is reached.
  3. Stir in oats, coconut, flaxseed meal, and chocolate chips until everything is evenly coated.
  4. Chill the mixture in the refrigerator or freezer until it is set and easier to handle.
  5. Shape the chilled mixture into 1-inch balls.
  6. Store the energy bites in an airtight container in the refrigerator.
