Peanut Butter Energy Bites

Instructions
- Add all ingredients except the dark chocolate chips to a food processor and pulse until combined.
- Transfer the mixture to a medium-sized bowl.
- Fold in the milk chocolate chips.
- Scoop the mixture into ping-pong size balls, approximately 2 tbsp. each.
- Roll the balls with your hands until smooth.
- Place the bites on a plate lined with parchment paper.
- Top with extra coconut flakes or dark chocolate chips if desired.
- Refrigerate for 30 – 45 minutes, then store in an airtight container in the fridge.
