Peanut Butter Energy Bites

Ingredients

  • 1 cup rolled oats
  • ¾ cup coconut flakes
  • ½ cup peanut butter
  • 1 ripe banana
  • 2 – 3 tbsp. honey
  • 3 tbsp. whole brown flax seeds
  • 1 tbsp. chia seeds
  • 1 tbsp. hemp seeds
  • 1 tbsp. vanilla
  • ¼ cup dairy-free milk chocolate chips

Instructions

  1. Add all ingredients except the dark chocolate chips to a food processor and pulse until combined.
  2. Transfer the mixture to a medium-sized bowl.
  3. Fold in the milk chocolate chips.
  4. Scoop the mixture into ping-pong size balls, approximately 2 tbsp. each.
  5. Roll the balls with your hands until smooth.
  6. Place the bites on a plate lined with parchment paper.
  7. Top with extra coconut flakes or dark chocolate chips if desired.
  8. Refrigerate for 30 – 45 minutes, then store in an airtight container in the fridge.
