Ingredients

  • 1 medium navel orange
  • 1 ¾ cup all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon nutmeg
  • teaspoon ground cloves (optional)
  • 1 cup non-dairy milk
  • cup extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9-inch cake pan.
  2. Juice and zest the navel orange and set aside.
  3. In a bowl, whisk together the flour, sugar, baking soda, salt, cinnamon, nutmeg, cloves, and orange zest.
  4. In another bowl, whisk the non-dairy milk, olive oil, two tablespoons of orange juice, apple cider vinegar, and vanilla extract.
  5. Combine the wet ingredients with the dry ingredients and stir until just combined.
  6. Pour the batter into the prepared cake pan and spread evenly.
  7. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool for 10 minutes before transferring it to a cooling rack.
  9. Once cooled, dust with powdered sugar.
