Ingredients

Orange Bread

  • ½ cup aquafaba
  • ½ cup organic sugar
  • cup vegan margarine, softened
  • ¾ cup vegan cultured yogurt, plain, unsweetened
  • ¼ cup orange juice
  • 1 cup white whole wheat flour
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 tablespoons fresh orange zest

Orange Glaze

  • 2 teaspoons orange juice
  • cup powdered sugar
  • 1 tablespoon fresh orange zest

Instructions

  1. Preheat the oven to 350°F.
  2. In a mixing bowl, whip aquafaba and sugar until thick and stiff peaks form.
  3. Lower the mixer speed and fold in margarine, yogurt, and orange juice.
  4. Add the flours, baking powder, baking soda, and orange zest, mixing gently until smooth.
  5. Line a loaf pan with parchment paper and pour in the batter, smoothing the top.
  6. Bake for 50-55 minutes until golden and a toothpick comes out clean.
  7. Let the bread rest for 10 minutes in the pan, then cool fully on a wire rack.
  8. For the glaze, mix orange juice and powdered sugar until smooth, then drizzle over the cooled bread and sprinkle with orange zest.
  9. Slice into 12 pieces and serve immediately or store as needed.
