Vegan Orange Marmalade Cookies

Ingredients

The cookies

  • ½ cup aquafaba
  • ¾ cup organic cane sugar
  • ½ cup vegan margarine spread or butter
  • 1 cup orange marmalade
  • 3 cups all purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt (optional)
  • ½ teaspoon cinnamon
  • ½ teaspoon cloves

The icing

  • 2 small oranges
  • 1 ½ cups powdered sugar

Instructions

  1. Whip aquafaba and sugar until stiff peaks form.
  2. Preheat the oven to 300°F.
  3. Reduce mixer speed and add margarine, mixing gently.
  4. Mix in the marmalade at low speed.
  5. Add flour, baking soda, salt, cinnamon, and cloves, mixing gently.
  6. Line baking sheets with parchment paper and scoop batter onto sheets.
  7. Bake for about 20 minutes until cookies are tender and light golden.
  8. Cool cookies on a wire rack.
  9. Make icing by zesting both oranges and mixing juice with powdered sugar.
  10. Frost cooled cookies with icing and sprinkle with zest.
  11. Serve immediately or freeze for up to three months.
