Ingredients

  • 1 tablespoon ground flaxseed
  • 3 tablespoons water
  • ¾ cup white sugar
  • ½ cup vegan butter
  • ¼ cup molasses
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon cloves
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt
  • ½ cup granulated sugar

Instructions

  1. Make a flax 'egg' by mixing ground flaxseed with water and letting it rest for 5 minutes.
  2. Cream together the vegan butter, sugar, and molasses until smooth, then add vanilla and the flax egg.
  3. Gradually mix in the dry ingredients: flour, baking soda, spices, and salt until a cohesive dough forms.
  4. Chill the dough in the fridge for 30 minutes.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Roll the dough into balls and coat them in sugar before placing them on the baking sheet.
  7. Bake for 8-10 minutes, then cool on a rack.
