Instructions
- Make a flax 'egg' by mixing ground flaxseed with water and letting it rest for 5 minutes.
- Cream together the vegan butter, sugar, and molasses until smooth, then add vanilla and the flax egg.
- Gradually mix in the dry ingredients: flour, baking soda, spices, and salt until a cohesive dough forms.
- Chill the dough in the fridge for 30 minutes.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Roll the dough into balls and coat them in sugar before placing them on the baking sheet.
- Bake for 8-10 minutes, then cool on a rack.
