Instructions
- Preheat the oven to 350°F.
- Whip the aquafaba in a mixing bowl until thick, about 4 minutes.
- Mix in the molasses, coconut palm or brown sugar, and dairy-free margarine until smooth.
- Add the almond meal, flour, baking soda, cinnamon, ginger, cloves, nutmeg, and optional salt, mixing just until smooth.
- Spray two baking sheets with nonstick cooking spray.
- Drop spoonfuls of cookie batter onto the baking sheets.
- Sprinkle the cookies with granulated sugar.
- Bake in the oven for 18-20 minutes, until cooked through and firm.
