Ingredients

  • ½ cup aquafaba
  • ¾ cup brown sugar or coconut palm sugar
  • 1 teaspoon vanilla
  • ¼ cup vegan stick butter, softened
  • ½ cup natural, crunchy peanut butter
  • 1 cup whole wheat flour
  • ½ cup peanut meal or flour
  • 2 teaspoons baking soda

Instructions

  1. Mix aquafaba and brown sugar until thick and stiff.
  2. Fold in vanilla, vegan butter, and peanut butter until blended.
  3. Combine whole wheat flour, peanut meal, and baking soda, then fold into the mixture until just blended.
  4. Refrigerate the cookie dough for 1 hour.
  5. Preheat the oven to 375°F.
  6. Roll dough into balls about 1 ½ inches in diameter and place on baking sheets.
  7. Flatten cookies with a fork dipped in flour.
  8. Bake for 12-14 minutes until tender but soft.
