Vegan Soft Peanut Butter Cookies

Instructions
- Mix aquafaba and brown sugar until thick and stiff.
- Fold in vanilla, vegan butter, and peanut butter until blended.
- Combine whole wheat flour, peanut meal, and baking soda, then fold into the mixture until just blended.
- Refrigerate the cookie dough for 1 hour.
- Preheat the oven to 375°F.
- Roll dough into balls about 1 ½ inches in diameter and place on baking sheets.
- Flatten cookies with a fork dipped in flour.
- Bake for 12-14 minutes until tender but soft.
