Ingredients

The cookies

  • 1 tablespoon flaxseed meal
  • 3 tablespoons water
  • cup packed brown sugar
  • 2 tablespoons granulated sugar
  • ¼ cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • teaspoon ground cinnamon
  • ¾ cup creamy peanut butter
  • 1 teaspoon pure vanilla extract

For rolling (optional)

  • ¼ cup granulated sugar

Instructions

  1. Combine flaxseed meal and water in a small bowl and let sit for 10 minutes to create a flax egg.
  2. In a separate bowl, whisk together brown sugar, granulated sugar, flour, baking powder, baking soda, salt, and cinnamon until combined.
  3. Add peanut butter, vanilla, and the flax egg to the dry ingredients and mix until smooth.
  4. Chill the dough in the refrigerator for 30 minutes.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Scoop out heaping tablespoons of dough, roll into balls, and optionally roll in sugar before placing on the baking sheet.
  7. Use a fork to make a crisscross pattern on each cookie.
  8. Bake for about 8 minutes until edges are golden, then let cool on the baking sheet for a few minutes before transferring to a wire rack.
