Vegan Peanut Butter Cookies

Instructions
- Combine flaxseed meal and water in a small bowl and let sit for 10 minutes to create a flax egg.
- In a separate bowl, whisk together brown sugar, granulated sugar, flour, baking powder, baking soda, salt, and cinnamon until combined.
- Add peanut butter, vanilla, and the flax egg to the dry ingredients and mix until smooth.
- Chill the dough in the refrigerator for 30 minutes.
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Scoop out heaping tablespoons of dough, roll into balls, and optionally roll in sugar before placing on the baking sheet.
- Use a fork to make a crisscross pattern on each cookie.
- Bake for about 8 minutes until edges are golden, then let cool on the baking sheet for a few minutes before transferring to a wire rack.
