Instructions
- Preheat the oven to 375°F.
- Line a baking sheet with parchment paper.
- In a small bowl, mix the gluten-free flour, baking soda, salt, and cinnamon.
- In a stand mixer, combine the coconut oil, peanut butter, maple syrup, and vanilla extract until smooth.
- Add the dry ingredients and almond milk to the mixer and mix until well combined.
- Form small 1-inch balls of dough and place them 1 inch apart on the prepared baking sheet.
- Press down on each ball with a fork to create a crisscross pattern.
- Bake for 10 minutes and then let cool on a cooling rack.
- For the chocolate ganache, melt the chocolate chips and coconut oil in the microwave and drizzle over the cooled cookies.
