Ingredients

The cookies

  • 1 ¾ cup Gluten Free 1-to-1 Baking Flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ½ cup coconut oil, solid
  • ½ cup creamy peanut butter
  • cup maple syrup
  • 2 tablespoons unsweetened almond milk
  • 1 teaspoon vanilla extract

Chocolate Ganache (optional)

  • cup vegan chocolate chips
  • ½ teaspoon coconut oil

Instructions

  1. Preheat the oven to 375°F.
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, mix the gluten-free flour, baking soda, salt, and cinnamon.
  4. In a stand mixer, combine the coconut oil, peanut butter, maple syrup, and vanilla extract until smooth.
  5. Add the dry ingredients and almond milk to the mixer and mix until well combined.
  6. Form small 1-inch balls of dough and place them 1 inch apart on the prepared baking sheet.
  7. Press down on each ball with a fork to create a crisscross pattern.
  8. Bake for 10 minutes and then let cool on a cooling rack.
  9. For the chocolate ganache, melt the chocolate chips and coconut oil in the microwave and drizzle over the cooled cookies.
