Vegan Peanut Butter Cookies

Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Combine the ground flaxseed and water in a small bowl and set aside for 5 minutes.
- In a medium bowl, mix the flour, baking soda, baking powder, and sea salt.
- In a large bowl, combine the coconut oil, cane sugar, brown sugar, peanut butter, and vanilla extract. Stir in the flaxseed mixture.
- Add the dry ingredients to the wet ingredients and mix until just combined.
- Chill the dough in the refrigerator for 30 minutes.
- Use a 2-tablespoon cookie scoop to portion the dough and roll into balls.
- Flatten the dough balls slightly and place them on the baking sheet. Use a fork to create a criss-cross pattern on top.
- Bake for 12 to 13 minutes, then let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
