Ingredients

The cookie dough

  • ½ tablespoon ground flax mixed with water
  • ¼ cup vegan butter
  • ¼ cup natural cane sugar
  • 2 tablespoons blackstrap molasses
  • 2 tablespoons pure maple syrup
  • ½ teaspoon pure vanilla extract
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ½ teaspoon baking soda
  • ¼ teaspoon fine grain sea salt
  • ¼ teaspoon ground cloves
  • 1 ¼ cups light spelt flour

Optional ingredients

  • ¼ cup diced candied ginger
  • 2-3 tablespoons sugar for rolling

Instructions

  1. Preheat the oven to 350°F and line a large baking sheet with parchment paper.
  2. Mix flax and water in a mug and set aside for a few minutes.
  3. In a large bowl, beat together the butter, sugar, molasses, syrup, vanilla, and flax mixture until smooth.
  4. Gradually mix in the dry ingredients until just combined, being careful not to overmix.
  5. Fold in the diced candied ginger if using.
  6. Shape the dough into small balls and roll them in sugar if desired.
  7. Place the balls on the baking sheet, spaced 2 inches apart, and flatten them slightly.
  8. Bake for 10-12 minutes, depending on your preferred cookie texture.
  9. Let the cookies cool on the pan for 5 minutes before transferring to a cooling rack.
