Instructions
- Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- Mix flax and water in a mug and set aside for a few minutes.
- In a large bowl, beat together the butter, sugar, molasses, syrup, vanilla, and flax mixture until smooth.
- Gradually mix in the dry ingredients until just combined, being careful not to overmix.
- Fold in the diced candied ginger if using.
- Shape the dough into small balls and roll them in sugar if desired.
- Place the balls on the baking sheet, spaced 2 inches apart, and flatten them slightly.
- Bake for 10-12 minutes, depending on your preferred cookie texture.
- Let the cookies cool on the pan for 5 minutes before transferring to a cooling rack.
