Ingredients

The dough

  • ½ cup unsalted room temperature butter or soft coconut oil
  • cup packed dark brown sugar
  • cup granulated sugar
  • cup unsulphured blackstrap molasses
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • ½ teaspoon ground cardamom
  • ½ teaspoon fine sea salt
  • 1 tablespoon water

For rolling

  • cup cane sugar

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Cream the butter and sugars in a stand mixer until light and fluffy, then add molasses and vanilla.
  3. In a separate bowl, combine the dry ingredients and gradually mix them into the wet mixture.
  4. Add 1 tablespoon of water to moisten the dough, adding more if necessary.
  5. Use a cookie scoop to portion the dough, roll into balls, and coat in cane sugar.
  6. Place the dough balls on the baking sheet, flatten slightly, and bake for 10 minutes.
  7. Let the cookies cool on the baking sheet for 10 minutes before transferring to a wire rack.
