Instructions
- 1. In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt, then set aside.
- 2. In a stand mixer or with an electric mixer, beat the butter, brown sugar, and shortening until smooth.
- 3. Add the molasses and egg, and beat until combined.
- 4. Reduce the mixer speed to low and gradually add the dry ingredients mixture.
- 5. Cover and chill the cookie dough for at least 2 hours or up to 3 days.
- 6. Preheat the oven to 375°F and line baking sheets with parchment paper.
- 7. Roll the dough into 1 ½-inch balls, toss in sugar, and place them on the baking sheets with space in between.
- 8. Flatten each ball with a glass.
- 9. Bake until the edges are set, about 8 to 12 minutes.
- 10. Transfer the cookies to wire racks to cool completely.
