Ingredients

The dough

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ cup butter, softened
  • ½ cup light brown sugar, firmly packed
  • ¼ cup shortening
  • ¾ cup molasses
  • 1 large egg

For rolling

  • ½ cup granulated sugar

Instructions

  1. 1. In a large bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, and salt, then set aside.
  2. 2. In a stand mixer or with an electric mixer, beat the butter, brown sugar, and shortening until smooth.
  3. 3. Add the molasses and egg, and beat until combined.
  4. 4. Reduce the mixer speed to low and gradually add the dry ingredients mixture.
  5. 5. Cover and chill the cookie dough for at least 2 hours or up to 3 days.
  6. 6. Preheat the oven to 375°F and line baking sheets with parchment paper.
  7. 7. Roll the dough into 1 ½-inch balls, toss in sugar, and place them on the baking sheets with space in between.
  8. 8. Flatten each ball with a glass.
  9. 9. Bake until the edges are set, about 8 to 12 minutes.
  10. 10. Transfer the cookies to wire racks to cool completely.
