Ingredients

The dough

  • ¾ cup butter
  • 1 large egg
  • cups all-purpose flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • ½ teaspoon cloves
  • 1 cup packed light brown sugar
  • ¼ cup molasses
  • 2 teaspoons baking soda
  • ¼ teaspoon salt

For coating

  • 1 cup granulated sugar

Instructions

  1. Cream the butter and brown sugar until light and fluffy.
  2. Add the egg and molasses, mixing until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, spices, and salt.
  4. Gradually mix the dry ingredients into the wet mixture, about ½ cup at a time.
  5. Chill the dough for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C).
  7. Shape the dough into 1.5-inch balls and roll them in granulated sugar.
  8. Place the dough balls on a parchment-lined cookie sheet, spaced 3 inches apart.
  9. Bake for 10-12 minutes until the edges are set and golden.
  10. Let the cookies rest on the sheet for 5 minutes before transferring to a cooling rack.
