Instructions
- Cream the butter and brown sugar until light and fluffy.
- Add the egg and molasses, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, spices, and salt.
- Gradually mix the dry ingredients into the wet mixture, about ½ cup at a time.
- Chill the dough for at least 30 minutes.
- Preheat the oven to 350°F (175°C).
- Shape the dough into 1.5-inch balls and roll them in granulated sugar.
- Place the dough balls on a parchment-lined cookie sheet, spaced 3 inches apart.
- Bake for 10-12 minutes until the edges are set and golden.
- Let the cookies rest on the sheet for 5 minutes before transferring to a cooling rack.
