Ingredients

The dough

  • 2 cups unbleached all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp ground ginger
  • tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¾ cup unsalted butter
  • ¾ cup packed light brown sugar
  • ¼ cup molasses
  • 2 Tbsp molasses
  • 1 large egg yolk
  • 2 tsp vanilla extract

For rolling

  • ¼ cup granulated sugar

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a mixing bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
  3. In a stand mixer, cream together the butter and brown sugar until well combined.
  4. Mix in the molasses, egg yolk, and vanilla extract until well combined.
  5. Gradually add the flour mixture and mix until combined.
  6. Shape the dough into balls about the size of a golf ball and roll them in granulated sugar.
  7. Place the dough balls on the prepared baking sheets, spacing them 2 inches apart.
  8. Bake for 9 to 11 minutes, until the cookies are puffed and lightly under-baked in the center.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
