Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg.
- In a stand mixer, cream together the butter and brown sugar until well combined.
- Mix in the molasses, egg yolk, and vanilla extract until well combined.
- Gradually add the flour mixture and mix until combined.
- Shape the dough into balls about the size of a golf ball and roll them in granulated sugar.
- Place the dough balls on the prepared baking sheets, spacing them 2 inches apart.
- Bake for 9 to 11 minutes, until the cookies are puffed and lightly under-baked in the center.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
