Instructions
- Chop the chocolate into 1/4-inch chunks.
- Sift together the white whole wheat flour, all-purpose flour, cocoa powder, ground ginger, cinnamon, cloves, and nutmeg in a medium bowl.
- In a mixing bowl, beat the butter and grated ginger until light, then add brown sugar and mix well.
- Dissolve baking soda in hot water and add to the mixture, then combine with half of the flour mixture.
- Add the remaining flour mixture and mix until just combined, then fold in the chocolate chunks.
- Shape the dough into a circle, wrap in plastic, and refrigerate for 2 hours or up to 3 days.
- Preheat the oven to 325°F and line baking sheets with parchment paper.
- Roll the chilled dough into 1 ½-inch balls, refrigerate for 20 minutes, then roll in granulated sugar.
- Bake for 10 to 12 minutes until the surfaces crack slightly, then cool on a wire rack.
