Ingredients

  • ¾ cup butter, melted
  • cup packed light or dark brown sugar
  • cup granulated sugar
  • cup unsulphured molasses
  • 1 large egg
  • 1 tablespoon finely grated fresh ginger
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • ½ cup natural, unsweetened or Dutch-process cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup semisweet chocolate chips
  • as needed none additional granulated sugar, for rolling

Instructions

  1. 1. In a large bowl, mix melted butter, brown sugar, granulated sugar, and molasses until combined.
  2. 2. Add the egg, fresh ginger, and vanilla, stirring until well mixed.
  3. 3. Add flour, cocoa powder, baking soda, cinnamon, ground ginger, and salt; stir until no dry streaks remain.
  4. 4. Fold in chocolate chips without overmixing.
  5. 5. Chill the dough for 1-2 hours or up to 24 hours.
  6. 6. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  7. 7. Scoop dough into balls (about 2 tablespoons each) and roll in granulated sugar.
  8. 8. Place the dough balls on the prepared baking sheets a few inches apart.
  9. 9. Bake for 10-12 minutes until cracks form on top and edges are set but centers are soft.
  10. 10. Cool on the baking sheet for 2-3 minutes before transferring to a wire rack.
