Instructions
- 1. In a large bowl, mix melted butter, brown sugar, granulated sugar, and molasses until combined.
- 2. Add the egg, fresh ginger, and vanilla, stirring until well mixed.
- 3. Add flour, cocoa powder, baking soda, cinnamon, ground ginger, and salt; stir until no dry streaks remain.
- 4. Fold in chocolate chips without overmixing.
- 5. Chill the dough for 1-2 hours or up to 24 hours.
- 6. Preheat the oven to 350°F and line two baking sheets with parchment paper.
- 7. Scoop dough into balls (about 2 tablespoons each) and roll in granulated sugar.
- 8. Place the dough balls on the prepared baking sheets a few inches apart.
- 9. Bake for 10-12 minutes until cracks form on top and edges are set but centers are soft.
- 10. Cool on the baking sheet for 2-3 minutes before transferring to a wire rack.
