Ingredients

The dough

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 ¼ teaspoons ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¾ cup unsalted butter
  • ¾ cup packed light or dark brown sugar
  • cup unsulphured or dark molasses
  • 1 large egg
  • 2 teaspoons pure vanilla extract
  • 1 ½ cups white chocolate chips

For rolling

  • cup granulated sugar

Instructions

  1. Mix the dry ingredients in a large bowl and set aside.
  2. Cream the softened butter and brown sugar until light and fluffy.
  3. Add molasses, egg, and vanilla to the butter mixture and mix well.
  4. Gradually add the dry ingredients to the wet mixture and mix until combined.
  5. Fold in the white chocolate chips without overmixing.
  6. Cover the dough and chill for at least 2 hours.
  7. Preheat the oven and prepare a baking sheet.
  8. Roll the dough into balls, coat them in granulated sugar, and place on the baking sheet.
  9. Bake until the edges are set, then press down gently on each cookie.
  10. Allow cookies to cool on the baking sheet before transferring to a wire rack.
