Soft and Chewy Molasses Cookies

Instructions
- Mix the softened butter, brown sugar, beaten egg, and molasses until well combined.
- Whisk together the dry ingredients: flour, baking soda, salt, cloves, cinnamon, and ginger.
- Add the dry ingredients to the wet ingredients and stir until combined.
- Portion the dough into 25-gram or 50-gram balls and roll them into balls.
- Dip each ball into granulated sugar and place them sugar-side up on a parchment-lined tray.
- Chill the dough balls for at least 3 hours, preferably overnight.
- Preheat the oven to 350°F (175°C).
- Place 8 dough balls on a parchment-lined sheet pan and bake for 8 to 11 minutes.
- Let the cookies cool completely on the sheet pan before eating.
