Cranberry Orange Bread

The Optional Glaze

Instructions
- Toast the walnuts in a pan until fragrant, then let them cool.
- Coat the cranberries in a little flour and set aside.
- Preheat the oven to 350°F and grease a 9x5-inch loaf pan.
- Combine the milk and vinegar to make vegan buttermilk and let it sit.
- Mix the flour, sugar, baking powder, baking soda, and salt in a bowl.
- Add the orange juice, optional orange zest, applesauce, buttermilk mixture, and vanilla extract. Mix until just incorporated.
- Fold in the walnuts and cranberries gently.
- Pour the batter into the prepared pan and top with extra cranberries.
- Bake for 55-60 minutes until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the glaze, mix powdered sugar and orange juice until combined. Adjust thickness as needed.
- Drizzle the glaze over the cooled bread and slice to serve.
