Cranberry Orange Bread

Instructions
- Preheat the oven to 350°F.
- Combine cranberries, sugar, orange zest, lemon zest, and flour in a medium bowl.
- Grease a 9 x 5 bread pan with cooking spray and line with parchment paper.
- Spread the cranberry mixture on the bottom of the pan.
- Whisk together milk and lemon juice in a small bowl and set aside for 5 minutes.
- In a large bowl, combine flour, cornmeal, brown sugar, baking powder, and salt, and make a well in the center.
- Pour the milk mixture, melted butter, and beaten eggs into the well and stir until just combined.
- Pour the batter over the cranberry mixture in the pan and spread evenly.
- Bake for 50 minutes or until a toothpick comes out with moist crumbs.
- Cool in the pan for 10 minutes, then remove using the parchment paper.
- If glazing, whisk together confectioner's sugar and milk or orange juice and drizzle over the cooled bread.
