Ingredients

The cranberries

  • 1 cup fresh cranberries
  • ¼ cup sugar
  • 1 tablespoon orange zest
  • 1 teaspoon lemon zest
  • 1 tablespoon all-purpose flour

The bread

  • ½ cup milk
  • ½ tablespoon lemon juice
  • 1 ½ cups all-purpose flour
  • ½ cup yellow cornmeal
  • cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup melted butter
  • 2 large eggs

Optional glaze

  • ¾ cup confectioner's sugar
  • 1-2 tablespoons milk or orange juice

Instructions

  1. Preheat the oven to 350°F.
  2. Combine cranberries, sugar, orange zest, lemon zest, and flour in a medium bowl.
  3. Grease a 9 x 5 bread pan with cooking spray and line with parchment paper.
  4. Spread the cranberry mixture on the bottom of the pan.
  5. Whisk together milk and lemon juice in a small bowl and set aside for 5 minutes.
  6. In a large bowl, combine flour, cornmeal, brown sugar, baking powder, and salt, and make a well in the center.
  7. Pour the milk mixture, melted butter, and beaten eggs into the well and stir until just combined.
  8. Pour the batter over the cranberry mixture in the pan and spread evenly.
  9. Bake for 50 minutes or until a toothpick comes out with moist crumbs.
  10. Cool in the pan for 10 minutes, then remove using the parchment paper.
  11. If glazing, whisk together confectioner's sugar and milk or orange juice and drizzle over the cooled bread.
