Ingredients

The bread

  • 2 cups all purpose flour
  • teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 cup granulated sugar
  • 5 tablespoons butter, melted
  • 1 large egg
  • ¾ cup buttermilk
  • 1 teaspoon vanilla extract
  • 2 cups fresh or frozen cranberries
  • 2 teaspoons orange zest
  • cooking spray

The glaze

  • 1 cup powdered sugar
  • tablespoons orange juice

Instructions

  1. Preheat the oven to 350°F and coat a 9" x 5" loaf pan with cooking spray.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and granulated sugar.
  3. Mix the melted butter, egg, buttermilk, and vanilla into the dry ingredients until just combined.
  4. Toss the cranberries with 1 tablespoon of flour and fold them along with the orange zest into the batter.
  5. Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick comes out clean.
  6. Let the bread cool for 10 minutes, then invert it onto a cooling rack to cool completely.
  7. For the glaze, mix the powdered sugar and orange juice until smooth and drizzle it over the cooled bread.
  8. Allow the glaze to set, then slice and serve.
