Ingredients

Wet Ingredients

  • 2 large eggs
  • ¼ cup maple syrup
  • ¼ cup unsweetened almond milk
  • 1 cup unsweetened applesauce
  • ½ teaspoon orange extract
  • 2 tablespoons melted coconut oil

Dry Ingredients

  • cups white whole wheat flour
  • ½ cup coconut sugar
  • 1 teaspoon baking soda
  • teaspoon salt
  • 1 tablespoon orange zest
  • 1 cup fresh cranberries

Glaze

  • 2 oz. softened cream cheese
  • 1 tablespoon orange juice
  • 1 teaspoon orange zest
  • ½ tablespoon honey

Instructions

  1. Preheat the oven to 350ºF and prepare a bread pan with non-stick cooking spray.
  2. Mix the dry ingredients in a medium bowl.
  3. In a large bowl, whisk the eggs and then add the maple syrup, almond milk, applesauce, and orange extract, mixing well.
  4. Combine the dry ingredients with the wet ingredients and mix thoroughly, then add the melted coconut oil and mix again.
  5. Pour the batter into the prepared bread pan and bake for 45-50 minutes until the center is fully cooked.
  6. While the bread bakes, prepare the glaze by softening the cream cheese in the microwave, then mixing it until smooth and adding the other glaze ingredients.
  7. Once baked, let the bread cool for 10 minutes before removing it from the pan, then allow it to cool for at least an hour before drizzling with glaze.
