Wet Ingredients

shortening

fresh or fresh frozen cranberries, coarsely chopped

pecans or walnuts, chopped
Instructions
Preheat the oven to 350°F.
In a large bowl, mix together the flour, sugar, baking powder, salt, and baking soda with a wooden spoon.
Stir in the orange juice, orange zest, shortening, and beaten egg until well blended.
Fold in the cranberries and nuts.
Pour the batter into greased mini loaf pans or one 9 x 5 inch loaf pan.
Bake for 40 minutes for mini loaves or 55 minutes for a large loaf, or until a toothpick comes out clean.
Remove from the pan and cool.
