Cranberry Banana Bread

Ingredients

  • 2 cups fresh or frozen cranberries
  • 1 ⅔ cups sugar
  • 1 cup water
  • 3 tablespoons shortening
  • 2 ½ tablespoons butter
  • 2 large eggs
  • 1 ¾ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon sea salt
  • 1 cup mashed banana
  • ½ cup chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F and prepare a loaf pan.
  2. In a saucepan, combine cranberries, 1 cup of sugar, and water. Heat for 5 minutes, then let sit for another 5 minutes before draining.
  3. In a mixing bowl, cream together shortening and butter, then gradually add remaining sugar until fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. In a separate bowl, mix flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the mashed banana.
  7. Fold in the cranberries and nuts.
  8. Pour the batter into the prepared pan and bake for 60-65 minutes until a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
