Ingredients

The bread

  • cup avocado oil
  • ½ cup maple syrup
  • ¼ cup Florida’s Natural Orange Juice
  • 2 pieces eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups mashed ripe bananas
  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1 ½ cups dried cranberries
  • optional unit zest of one orange

The orange glaze

  • 1 cup powdered sugar
  • 2 tablespoons Florida’s Natural Orange Juice
  • optional unit zest of half an orange

Instructions

  1. Preheat the oven to 325°F (165°C) and prepare a 9 x 5-inch bread pan.
  2. In a large bowl, whisk together the oil, maple syrup, orange juice, eggs, and vanilla until smooth.
  3. Mix in the mashed bananas until mostly smooth.
  4. In another bowl, combine the flour, baking soda, salt, and cinnamon.
  5. Add the dry ingredients to the banana mixture and stir until just combined, then fold in the cranberries and optional orange zest.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 50-60 minutes until a toothpick comes out clean.
  8. Let the bread cool for at least 15 minutes before slicing.
  9. For the glaze, whisk together powdered sugar and orange juice until smooth, adjusting thickness as desired.
