Instructions
- Preheat the oven to 325°F (165°C) and prepare a 9 x 5-inch bread pan.
- In a large bowl, whisk together the oil, maple syrup, orange juice, eggs, and vanilla until smooth.
- Mix in the mashed bananas until mostly smooth.
- In another bowl, combine the flour, baking soda, salt, and cinnamon.
- Add the dry ingredients to the banana mixture and stir until just combined, then fold in the cranberries and optional orange zest.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 50-60 minutes until a toothpick comes out clean.
- Let the bread cool for at least 15 minutes before slicing.
- For the glaze, whisk together powdered sugar and orange juice until smooth, adjusting thickness as desired.
