Cherry Orange Pistachio Bread

Ingredients

  • 2 medium overripe bananas
  • ¼ cup orange juice
  • 2 large eggs
  • cup pure maple syrup
  • ¼ cup avocado or melted coconut oil
  • 1 tsp vanilla extract
  • 1 ¼ cups super fine almond flour
  • 1 cup oat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp fine sea salt
  • 1 tbsp orange zest
  • ½ or ¾ cup dried tart cherries
  • ¼ cup pistachios, chopped

Instructions

  1. Preheat the oven to 350°F and grease a loaf pan.
  2. Blend the bananas, orange juice, eggs, maple syrup, oil, and vanilla until smooth.
  3. In a large mixing bowl, whisk together the almond flour, oat flour, baking soda, baking powder, salt, and orange zest.
  4. Add the blended wet ingredients to the dry ingredients and mix until smooth.
  5. Fold in the dried cherries and pistachios.
  6. Pour the mixture into the prepared loaf pan and bake for 55 minutes, or until a knife comes out almost clean.
  7. Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
