Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- Blend the bananas, orange juice, eggs, maple syrup, oil, and vanilla until smooth.
- In a large mixing bowl, whisk together the almond flour, oat flour, baking soda, baking powder, salt, and orange zest.
- Add the blended wet ingredients to the dry ingredients and mix until smooth.
- Fold in the dried cherries and pistachios.
- Pour the mixture into the prepared loaf pan and bake for 55 minutes, or until a knife comes out almost clean.
- Let the bread cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
