Ingredients

Wet Ingredients

  • cup extra-virgin olive oil
  • ½ cup maple syrup
  • ¼ cup Blue Diamond Almond Breeze Unsweetened Almondmilk
  • 2 units eggs
  • teaspoons vanilla extract
  • cups mashed ripe bananas

Dry Ingredients

  • cups white whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • pinch ground nutmeg

Instructions

  1. Preheat the oven to 325°F (165°C) and prepare a 9 x 5-inch bread pan.
  2. In one bowl, whisk together the olive oil, maple syrup, almond milk, eggs, and vanilla extract until smooth.
  3. Mix in the mashed bananas until mostly smooth.
  4. In another bowl, combine the flour, baking soda, salt, cinnamon, and nutmeg.
  5. Pour the dry ingredients into the wet mixture and stir until just combined.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 50-60 minutes until a toothpick comes out clean.
  8. Let the bread cool for at least 15 minutes before slicing.
