Ingredients

  • 1 Tbsp flaxseed meal
  • 2 ½ Tbsp water
  • 3 medium ripe bananas
  • 3 ½ tsp baking powder
  • 1 pinch sea salt
  • cup salted natural peanut butter
  • 2 ½ Tbsp avocado or coconut oil (melted)
  • ¼ scant cup organic cane sugar
  • ¼ cup packed light brown sugar
  • 2-3 Tbsp agave or maple syrup
  • ¾ cup unsweetened almond or other non-dairy milk
  • 1 ¼ cup almond meal
  • ½ cup unsweetened cocoa powder
  • 1 cup gluten-free flour blend
  • 1 cup gluten-free rolled oats
  • ¼ cup dairy-free chocolate chips
  • ¼ cup Peanut Butter Chips (optional)

Instructions

  1. Preheat the oven to 350°F (176°C) and prepare a loaf pan.
  2. Mix flaxseed meal and water in a large bowl to create a flax egg and let it rest for 5 minutes.
  3. Mash the ripe bananas thoroughly in the bowl.
  4. Add all ingredients up to almond milk and whisk to combine.
  5. Stir in cocoa powder, almond meal, gluten-free flour blend, and oats until mixed.
  6. Fold in the chocolate and peanut butter chips if using.
  7. Pour the batter into the prepared loaf pan and bake for 1 to 1 hour 15 minutes.
  8. Allow the bread to cool completely before slicing, preferably overnight.
