Ingredients

Batter

  • 3 large ripe bananas
  • 2 large eggs
  • ½ cup natural peanut butter
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract
  • cup oat flour
  • 1 tsp baking powder
  • ½ cup coconut sugar
  • ½ tsp salt

Glaze

  • 1 cup powdered sugar
  • ¼ cup natural peanut butter
  • splash N/A milk (to desired consistency)
  • to taste N/A flake salt (for sprinkling)

Instructions

  1. Preheat the oven to 350°F and grease a 9×4 inch loaf pan.
  2. Mash the bananas in a large bowl until smooth, then whisk in the eggs, peanut butter, coconut oil, and vanilla until well combined.
  3. In a separate medium bowl, mix together the oat flour, baking powder, coconut sugar, and salt.
  4. Combine the dry ingredients with the wet ingredients and mix until just combined.
  5. Pour the batter into the greased loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool completely after baking.
  7. While the bread cools, prepare the glaze by whisking together the powdered sugar, peanut butter, and milk until smooth.
  8. Drizzle the glaze over the cooled loaf and sprinkle with flake salt.
