Ingredients

  • 1 cup all-purpose flour
  • ½ cup Dutch process cocoa
  • 1 teaspoon baking soda
  • ½ teaspoon sea salt
  • 3-4 pieces brown bananas (1 ½ cups mashed)
  • ¾ cup packed light brown sugar
  • ¼ cup melted butter
  • ¼ cup canola, vegetable, grapeseed, or coconut oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup semi-sweet chocolate chips
  • cup creamy peanut butter
  • ½ cup peanut butter chips

Instructions

  1. Preheat the oven to 350°F and grease a 9-by-5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. In a large bowl, mash the ripe bananas and mix in the melted butter and oil.
  4. Add the brown sugar, egg, and vanilla extract to the banana mixture and stir until smooth.
  5. Combine the dry ingredients with the wet ingredients without overmixing, then gently fold in the chocolate chips.
  6. Pour half of the batter into the prepared loaf pan and drop spoonfuls of peanut butter on top.
  7. Swirl the peanut butter into the batter, then top with the remaining batter and sprinkle peanut butter chips on top.
  8. Bake for 60-65 minutes, checking with a toothpick for doneness.
  9. Let the bread cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
