Cranberry Walnut Bread

Ingredients

The dough

  • 1 cup whole wheat flour
  • 2 ¼ cups bread flour
  • 1 ¼ tsp salt
  • ¾ Tbsp instant yeast
  • 1 ¼ cups water

The mix-ins

  • ¼ cup chopped walnuts
  • ¼ cup dried cranberries

For baking

  • 2 Tbsp cornmeal

Instructions

  1. Combine the dry ingredients in a large bowl, excluding cornmeal.
  2. Add water and stir until a shaggy dough forms.
  3. Let the dough sit covered at room temperature for 2 hours.
  4. Turn the dough out onto a floured surface and fold it a few times to shape it.
  5. Shape the dough into one large or two small balls.
  6. Place the shaped dough on a cornmeal-sprinkled baking sheet and let it rise for at least 1 hour.
  7. Preheat the oven to 450 degrees Fahrenheit.
  8. Make slits on top of the dough, brush with water, and bake for about 30 minutes until golden brown.
  9. Cool the bread on a wire rack.
