Ingredients

  • ½ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 5 large eggs
  • ½ cup coconut oil, melted
  • ½ cup maple syrup
  • 1 cup frozen cranberries

Instructions

  1. 1. Pulse together coconut flour, salt, and baking soda in a food processor.
  2. 2. Pulse in eggs, coconut oil, and maple syrup.
  3. 3. Remove the blade from the food processor and stir in cranberries.
  4. 4. Pour batter into two greased mini loaf pans.
  5. 5. Bake at 350°F for 35-40 minutes.
  6. 6. Cool and serve.
