Ingredients

Dry Ingredients

  • 3 cups gluten-free flour (or white whole wheat)
  • 2 ¼ tsp baking powder
  • 1 ½ tsp salt
  • ¾ tsp baking soda

Wet Ingredients

  • 1 ¼ cups maple syrup
  • 1 cup orange juice
  • ¼ cup melted coconut oil
  • 2 units eggs

Add-ins

  • 2 cups chopped cranberries

Instructions

  1. Preheat the oven to 350°F and grease 4 mini-loaf pans or two standard loaf pans.
  2. In a small bowl, stir together the dry ingredients.
  3. In a large bowl, mix the wet ingredients together.
  4. Add the dry ingredients to the wet ingredients and stir to combine evenly.
  5. Fold in the chopped cranberries and transfer the batter to the loaf pans.
  6. Bake for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool on a wire rack before cutting.
