Ingredients

  • ½ cup coconut flour
  • ¼ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • 5 large eggs
  • ½ cup coconut oil, melted
  • ½ cup maple syrup
  • 1 cup frozen cranberries

Instructions

  1. Combine coconut flour, salt, and baking soda in a food processor.
  2. Add eggs, melted coconut oil, and maple syrup to the mixture and pulse until combined.
  3. Remove the blade from the food processor and stir in the frozen cranberries.
  4. Pour the batter into two greased mini loaf pans.
  5. Bake at 350°F for 35-40 minutes.
  6. Cool the loaves before serving.
