Spaghetti with Fresh Tomato Sauce

The pasta

whole grain thin spaghetti or angel-hair pasta or rotini/fusilli or penne

freshly grated Parmesan
Instructions
- Chop two-thirds of the tomatoes and grate the remaining tomatoes into a bowl.
- Mix in olive oil, lemon juice, salt, sugar, black pepper, and garlic to the grated tomatoes and let marinate.
- Cook the pasta in salted boiling water until al dente, reserving some cooking water.
- Drain the pasta and return it to the pot, adding the tomato sauce and a splash of reserved pasta water.
- Cook over medium-low heat for 1 to 2 minutes until the tomatoes soften and coat the pasta.
- Remove from heat and toss with Parmesan and basil before serving.
