Spaghetti with Fresh Tomato Sauce

Ingredients

The sauce

  • 1 ½ pounds ripe tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon sugar
  • to taste freshly ground black pepper
  • 1 very small clove garlic
  • ¼ cup chopped fresh basil

The pasta

  • ½ pound whole grain thin spaghetti or angel-hair pasta or rotini/fusilli or penne
  • ½ cup freshly grated Parmesan

Instructions

  1. Chop two-thirds of the tomatoes and grate the remaining tomatoes into a bowl.
  2. Mix in olive oil, lemon juice, salt, sugar, black pepper, and garlic to the grated tomatoes and let marinate.
  3. Cook the pasta in salted boiling water until al dente, reserving some cooking water.
  4. Drain the pasta and return it to the pot, adding the tomato sauce and a splash of reserved pasta water.
  5. Cook over medium-low heat for 1 to 2 minutes until the tomatoes soften and coat the pasta.
  6. Remove from heat and toss with Parmesan and basil before serving.
