Ingredients

The pasta

  • 4 oz Dry Spaghetti

The sauce

  • ¼ cup Olive Oil
  • cups Cherry Tomatoes, halved
  • 1 large Shallot, thinly sliced
  • 2 cloves Garlic, minced
  • ¼ cup fresh Basil Leaves, thinly sliced
  • ¼ tsp Red Pepper Flakes
  • to taste Salt
  • to taste Cracked Black Pepper
  • 1 tbsp freshly squeezed Lemon Juice

Instructions

  1. Cook spaghetti noodles according to package instructions, reducing time by one minute for al dente.
  2. In a large saucepan over medium heat, heat one tablespoon of olive oil and add shallots, cherry tomatoes, red pepper flakes, and a pinch of salt.
  3. Cook the vegetables until softened and slightly charred, about 6-7 minutes.
  4. Add another tablespoon of olive oil and minced garlic, cooking until fragrant for about one minute.
  5. Transfer the cooked noodles to the pan, add chopped basil, and toss all ingredients together.
  6. Drizzle in the remaining olive oil and lemon juice, then toss again. Season with salt and black pepper to taste, and serve immediately.
