Simple Spaghetti

whole-wheat spaghetti (or penne, rigatoni, macaroni, etc.)

Instructions
- 1. Boil a large pot of water.
- 2. Dice the onion and prosciutto.
- 3. Blanch tomatoes in boiling water for about 1 minute, then cool and peel them.
- 4. Cook the pasta according to package instructions in the same boiling water.
- 5. Heat olive oil in a sauté pan and cook the prosciutto, onion, and red pepper flakes for 3-4 minutes.
- 6. Peel, seed, and chop the tomatoes, then add them to the pan.
- 7. Cook the tomato mixture until slightly thickened, about 8-10 minutes.
- 8. Combine the sauce with the drained pasta and serve with optional toppings.
