Simple Spaghetti

Ingredients

The sauce

  • cup olive oil
  • 1 medium yellow onion
  • ¼ lb prosciutto (or pancetta)
  • 1 pinch crushed red pepper
  • 10 medium ripe tomatoes

The pasta

  • ½ lb whole-wheat spaghetti (or penne, rigatoni, macaroni, etc.)

For topping (optional)

  • to taste parmesan cheese (grated)
  • to taste basil

Instructions

  1. 1. Boil a large pot of water.
  2. 2. Dice the onion and prosciutto.
  3. 3. Blanch tomatoes in boiling water for about 1 minute, then cool and peel them.
  4. 4. Cook the pasta according to package instructions in the same boiling water.
  5. 5. Heat olive oil in a sauté pan and cook the prosciutto, onion, and red pepper flakes for 3-4 minutes.
  6. 6. Peel, seed, and chop the tomatoes, then add them to the pan.
  7. 7. Cook the tomato mixture until slightly thickened, about 8-10 minutes.
  8. 8. Combine the sauce with the drained pasta and serve with optional toppings.
