Ingredients

The Cookies

  • 1 cup Artisana Organics coconut butter, melted
  • 1 cup Bobs Red Mill coconut flour
  • 3 tbsp arrowroot flour
  • ½ cup The Maple Guild maple syrup
  • 4 large Vital Farms eggs
  • ½ cup coconut sugar
  • 3-4 tbsp lemon zest
  • 3-4 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • pinch sea salt

The Drizzle

  • ½ cup melted coconut butter
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a small bowl, whisk together the coconut flour, arrowroot flour, coconut sugar, baking soda, and sea salt.
  4. In another bowl, whisk together the eggs, melted coconut butter, maple syrup, vanilla extract, lemon zest, and lemon juice.
  5. Combine the wet ingredients with the dry ingredients and let the mixture sit for 5 minutes to thicken.
  6. Form the cookie dough into balls and place them on the baking sheet, pressing down if you want flatter cookies.
  7. Bake for 10-12 minutes, checking for desired chewiness.
  8. Let the cookies cool, then mix the melted coconut butter and lemon juice for the drizzle and apply on top.
