Instructions
- Preheat the oven to 350°F.
- Line a baking sheet with parchment paper.
- In a small bowl, whisk together the coconut flour, arrowroot flour, coconut sugar, baking soda, and sea salt.
- In another bowl, whisk together the eggs, melted coconut butter, maple syrup, vanilla extract, lemon zest, and lemon juice.
- Combine the wet ingredients with the dry ingredients and let the mixture sit for 5 minutes to thicken.
- Form the cookie dough into balls and place them on the baking sheet, pressing down if you want flatter cookies.
- Bake for 10-12 minutes, checking for desired chewiness.
- Let the cookies cool, then mix the melted coconut butter and lemon juice for the drizzle and apply on top.
