Instructions
- Preheat the oven to 350°F.
- Whip together the coconut oil, maple sugar, and coconut milk until combined.
- Add the egg, vanilla, lemon juice, and lemon zest, and mix until combined.
- Add the dry ingredients (cassava flour, baking soda, sea salt, and poppy seeds) and mix on low speed.
- Scoop the cookie dough onto a parchment-lined baking sheet, spacing them about 1 inch apart, and gently flatten the tops.
- Bake for 10-12 minutes until edges are slightly golden brown.
- Let the cookies cool completely.
- For the optional glaze, mix powdered sugar and coconut milk, then add lemon juice, zest, and vanilla until smooth.
- Drizzle the glaze over the cooled cookies and top with additional lemon zest and sliced almonds if desired.
