Instructions
- Preheat the oven to 350°F.
- Make a flax egg by combining ground flaxseed with warm water, and set aside for 5 minutes.
- In a large bowl, mix melted vegan butter, white sugar, and brown sugar until combined.
- Stir in the flax egg, lemon extract, and vanilla extract.
- In a separate bowl, mix flour, baking soda, and salt. Combine this dry mixture with the wet ingredients, along with lemon zest and poppy seeds.
- Form the dough into 10 balls and flatten them slightly.
- Place the cookie dough balls on a lined baking sheet, spaced 2 inches apart.
- Bake for 8-10 minutes until the edges are crinkled and slightly golden.
- Let the cookies rest for 5 minutes before transferring to a cooling rack.
