Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the dry ingredients and set aside.
- In a stand mixer, cream together the butter, sugar, and zests until well combined.
- Add the oil, egg, and lemon juice, mixing until pale and evenly combined.
- Gradually add the dry ingredients to the creamed mixture, mixing on low speed until just combined.
- Scoop out tablespoon-sized portions of dough onto the prepared baking sheet.
- Lightly sprinkle the cookies with sugar and bake for 12 to 13 minutes.
- Let cool on the pan for 1 minute before transferring to a cooling rack.
